Waipara Springs, founding winery and restaurant of the Waipara Region, was established in 1989 and remains an entirely owned and operated Family Estate.

Waipara Springs Winery and Restaurant remains an authentic New Zealand family owned and operated estate, with over 30 years of tradition producing premium wines to compliment your culinary experience in the Waipara Valley. We respect the importance of our customers and ensure that the service we provide is in keeping with their expectations.

Waipara Springs is the founding Winery and Café of Waipara, established in 1989. Now in its 3rd Generation of management. In keeping with past generations, your hosts Andrew and Katie very much share the vision of “Wine, Dine, Relax”. Our motto is about providing a knowledgeable wine and premium dining experience, in a relaxing setting for all customers to enjoy.  Premium Wines are produced using tradition techniques from estate grown vines to complement the colourful and quality culinary experience, with ingredients sourced from local North Canterbury suppliers.

Waipara Springs is available and the perfect venue for all occasions including casual dining, group lunch bookings, corporate functions, weddings and wine tastings.

We can create an experience to suit your requirements. We also have a Cellar Club which provides great benefits for members and invitations to special events.

We are excited after many years of bottle aging to release and share with you all two exceptional wines. They are a true reflection and display the unique flavours and quality that best represent the Waipara Valley in the North Canterbury wine region at its highest standard.


Non-grafted vines were planted by Jill and Bruce Moore in 1982 in the limestone rich soils of the Waipara Valley, North Canterbury. Such vines, on original European root stock, are rare due to phylloxera infestation requiring American vines for grafting. This hand harvested vintage was aged in tight grain French oak for a year before bottling in March 2020.

Premium wine to celebrate two of Waipara Springs iconic family members and pioneers in the New Zealand Wine industry, Jill and Bruce Moore. These wines have been specially made with love and admiration by family members to the highest quality to celebrate Jill and Bruce’s retirement and their contribution to the family estate, which spans over four decades.


Elegantly styled Chardonnay and Pinot Noir are of limited production by design from this Heritage Vineyard.
